Two 5-6oz Salmon Filets

1 - 17.5oz package of Potato Gnocchi

1 Lemon
-
Arugula
-
2T Olive Oil
-
3T Cold Butter

Wildlife Seasonings Alaskan Salmon Seasoning
Directions
Salmon filets liberally with Wildlife Seasoning Alaskan Salmon Blend
Heat a heavy sauté pan with 1T olive oil and 1T butter until butter melts and foams
Place Gnocchi in pan an increase the heat to high. Do not stir.
When golden brown and crispy on one side, stir the gnocchi and season with salt and Wildlife Seasoning Alaskan Salmon.
Cook 2-3 more minutes on high heat.
Reduce heat to low and let the pan cool slightly.
Squeeze the juice of one lemon into the pan and add the remaining 2T of cold butter.
Toss to melt butter and set aside - not on heat.
In a cast iron skillet on very high heat place 1T olive oil (or other neutral oil).
When very hot place salmon in pan and do not move until a significant crust is formed 3-5 minutes.
Flip salmon and cook on other side 1-3 minutes depending on thickness of filet.
Remove from pan and set aside.
Returning to gnocchi pan (should still be warm) add a handful of arugula and toss to wilt slightly.
Serve salmon on top of a bed of the gnocchi. Garnish with lemon wedge
