Of course, you can use chicken as a replacement if you're not into rattlesnake.

Ingredients

1 Rattlesnake (approximately 2lbs dressed weight)

Peanut Oil

1C. Panko Style Breadcrumbs

1C Coarse Corn Meal

1C. AP Flour

4T Corn Starch

Wildlife Seasonings Rattlesnake Mesquite to taste

Wet Ingredients

1C. Buttermilk

3 Large Eggs
-
1C. Mayo
-
1/3 C. Ketchup

2T. Hot Sauce

Snake Bites
Dry Ingredients
Snake Sauce
Directions
Snake Sauce
Combine all ingredients
1C. Mayo
1/3 C. Ketchup
2T. Hot Sauce
Rattlesnake Mesquite to taste
Mix until uniform
Rattlesnake Mesquite to top
Snake Bites
Skin and clean 1 rattlesnake (wear latex gloves, rattlesnake tends to have an odor that is difficult to remove)
Cut off the end pieces and cut the rest into chunks about the size of a chicken tender
Soak in buttermilk overnight
Remove the snake pieces from the buttermilk, pat dry and season liberally with Wildlife Seasonings Rattlesnake Mesquite
Mix the wet ingredients and set aside
Mix the dry ingredients and set aside
Heat a Dutch oven filled with about 3 inches of peanut oil to 350F
Dredge the snake and deep fry in batches till floating and golden brown
Do not crowd the pan
Remove from oil and place on paper towels, immediately season (again) with Wildlife Seasoning Rattlesnake Mesquite.
Serve with Snake Sauce (recipe attached)
